As a Texas brasserie, The Maverick features a French inspired menu through classic preparation using Texas ingredients when possible — most prepared over an open wood fire. Chef Chris Carlson brings years of experience working at some of the most critically acclaimed restaurants in both Chicago and Texas. This southtown restaurant brings energy and excitement to some classic dishes.


The Maverick not only focuses on brasserie cuisine, it also exemplies Texas Southern hospitality where customers are warmly welcomed like esteemed long-time friends. San Antonio native, Josh Thomas, has returned home from San Francisco to serve as Director of Hospitality & Beverage for The Maverick. As an Advanced certified sommelier (CMS), Josh brings his award-winning experience of more than 20 years in the wine and food industry back to San Antonio for a revival of hospitality. With The Maverick, he hopes to create a welcoming space that is known for its inviting charm as well as its memorable food and drinks.

Not just any other Southtown Restaurant

The handsome brick buildings housing The Maverick, are rich in both history and industrial materials. Dating back to the 1920s, the historic structures have hosted everything from a Presbyterian church to an Anheuser-Busch storage facility. Most recently it was occupied by an eclectic blend of trendy liquor store meets vintage clothing shop and Gemini Ink, a
local writing nonprofit. Even on a first-time visit to The Maverick, the historical characteristics of the building enhances the sense that you’ve been coming here for years.
